BBQ Chicken



Ingredients




18 Chicken Legs
Homemade BBQ sauce or store bought BBQ sauce.

Preparation Instructions

Preheat oven to 425 degrees. Place chicken legs on a broiler pan or any pan with a rack, then roast for 20 minutes.
After 20 minutes of roasting, crank on the broiler to get a little color on the legs. Broil for five minutes.
Remove chicken legs from oven. Reduce oven to 350 degrees. With tongs, dip each chicken leg into the sauce, submerging completely. Place back onto the pan. After all chicken is coated, return pan to oven for five minutes, or until hot and sizzling.
Remove from oven. Brush/dab generously with remaining sauce. Allow chicken to sit a few minutes before serving.

Pineapple Sheet Cake


Cake Ingredients:
2 cups flour
2 cups sugar
2 tsp. baking soda
1/4 tsp. salt
2 eggs
20 ounce can (about 2 cups) crushed pineapple, in juice, don’t drain
1 tsp. vanilla
1/2 cup nuts (optional) 

Cake Directions:
Preheat oven to 350 degrees
Mix all ingredients for 45 seconds until smooth. Pour mixture in a greased a 9x13 baking dish.
Bake for 30 to 40 mins or until toothpick comes out clean. 
Let cool before topping with icing. 

Icing Ingredients:

8 ounces cream cheese
4 tbsp. butter
3 cups confectioners sugar
1 tsp. vanilla
1/2 cup nuts- optional
Icing Directions:
Beat butter and cream cheese until smooth and creamy. Add Vanilla. Slowly add sugar and blend. Fold in nuts if desired. 
This cake is rich and sweet.

Chicken Parmigiana


Ingredients

  • 1 egg, beaten
  • 2 ounces dry bread crumbs
  • 2 skinless, boneless chicken breast halves
  • 3/4 (16 ounce) jar spaghetti sauce
  • 2 ounces shredded mozzarella cheese
  • 1/4 cup grated Parmesan 


Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet.
  2. Pour egg into a small shallow bowl. Place bread crumbs in a separate shallow bowl. Dip chicken into egg, then into the bread crumbs. Place coated chicken on the prepared baking sheet and bake in the preheated oven for 40 minutes, or until no longer pink and juices run clear.
  3. Pour 1/2 of the spaghetti sauce into a 7x11 inch baking dish. Place chicken over sauce, and cover with remaining sauce. Sprinkle mozzarella and Parmesan cheeses on top and return to the preheated oven for 20 minutes.
